Goat Cheese & Tomato Salad Dressing

This is based on a recipe I got from my friend Dawn, with a few tweaks of my own.  This is one of our all time favorite salad dressings.  I make it whenever I buy goat cheese and can find at least halfway decent tomatoes.  It is AMAZING with tomatoes that are fresh from your garden or farmers’ market!

Be sure to only use the solid parts of your tomatoes, or your dressing will be runny like the dressing pictured here–since I completely forgot to take out the seeds and watery parts.  (Oops.)

Goat Cheese & Tomato Dressing (1 WW point per Tbs.)
Makes 2 cups or 16 servings that are 2 Tbs. each.

2 oz goat cheese
2 Tbs white balsamic vinegar
1 Tbs finely chopped fresh basil (or 1 tsp dried basil in a pinch)
1 clove garlic, diced or smushed
1 cup coarsely chopped fresh tomato (Take out the seeds and watery parts or your dressing will be runny.)
1/2 cup olive oil
salt and pepper to taste

  1. Put everything in the blender and pulse to combine and puree.
  2. With the blender running, add the oil in a slow stream until the mixture is smooth.
  3. Taste and season with salt & pepper.
  4. Will keep in the fridge for about 2 weeks, but shake well before using.
